Chef's Evening Marketplace Special (Eastbound, July 2012)Red chile braised beef short-rib inspired by Amtrak Culinary Advisory Team Chef and restaurateur Roberto Santibanez. The short-rib is slow cooked in pasilla-chipotle sauce with lime marinated onions, served with garlic mashed potatoes and vegetable medley.
